Marble plate 40 x 30 cm
OverviewA marble plate is not only very beautiful, but also very handy. You can use this marble plate for rolling out fondant, marzipan or other dough. Moreover, the plate is perfect for tempering chocolate. Tempering chocolate is important to get the chocolate nice and shiny and crispy. Using a marble plate, you can temper according to the 'tableer' methods.
Tabling with the marble plate
- Melt the chocolate to about 45C (e.g. via au-bain-marie or in the microwave).
- Pour about 2/3 of the melted chocolate onto the marble plate.
- Cool the chocolate by using a spatula to keep the chocolate constantly moving. You do this until the chocolate has cooled to around 27°C
- Then add both parts of chocolate together in a bowl and stir well. If all goes well, the chocolate is now about 31.5°C.
- It is important that you stir the chocolate well.
- The chocolate is tempered and is then ready for processing!
